A Guide to Ordering Tuna Sushi

Many of you might already familiar with the Japanese word maguro, which is the Japanese word for bluefin tuna. It is one of the best-known and most popular kind of fish you can order in many Sushi dining place. There is more to know about tuna than the maguro you usually order.


Tuna is one of the rare sushi items where your order is determined not only by the type of tuna you are consuming, but also from where that piece of meat actually comes from. Basically, tuna fish is further broken up into subtypes based on the fat content akami and toro.

Above, back and lenten part of tuna are called akami, this is the leaner part of the meat. If you order maguro at a sushi bar, or any other basic tuna dish, you will get this part. Akami is further categorized into three different part based on the quality: se-kami (medium quality), se-naka (highest quality) and se-shimo (lowest quality).


The lower part of the stomach and also the fatty part of tuna is called toro. Toro is also further broken up into three distinct subtypes, and they are more expensive due to their relative scarcity as a proportion of the entire fish. The three different types are:


1. Harakami or also known as o-toro, this is the fattiest part of the fish and it can be found on the side of the belly. This part contains so much fat, it will literally melt in your mouth.


2. Hiranaka or also known as chu-toro, some people prefer this part because it does not have that much fat compared to o-toro. It combines the lighter but deep, slightly bitter flavor of an akami with the sweet tenderness of an o-toro.


3. Hara-shimo is the least fatty part of the belly. Even though it is the least fatty, the price of this part is still generally higher compared to akami.


It is fascinating that akami and toro have a different taste even though they come from the same piece of fish. Toro has a nice lighter red color with white fat line, compared to akami, which has a deep aggressive red color.
